Autumn potato cubes

Serves 8 – 10:

  • 3 kg Grocholl Potato cubes
  • 1 kg swede, diced
  • 500 g carrots, diced
  • 200 g celeriac, diced
  • 200 g leeks, diced
  • 200 g onions, diced
  • goose fat or dripping
  • parsley, chopped
  • salt
  • pepper


Blanch the vegetables (swede, carrots, celeriac, leeks) so they are still firm to the bite and rinse well with ice water.
Then sauté the potatoes in the pan with the fat or dripping and add all the vegetables.

Season to taste and garnish with parsley.
